Omnipollo 'Hypnopompa' Bourbon Barrel Aged Marshmallow Stout. 11.1% abv. Black in color with a finger of mocha head. Excellent retention and lacing. Nose is sweet, malty, milk chocolate, vanilla, light roast malt. Bourbon aroma comes through as the temp drops. Front taste of bittersweet chocolate, vanilla, warm sugar, strong bourbon notes on the back end. Aftertaste is bourbon, oak, chocolate syrup, marshmallows. Full body. Mouthfeel is warm, creamy, silky, very thick, sticky.

This is an excellent and unique beer. The gimmick brewing with marshmallows - a lot of them - can only grab your attention, but the aroma and flavor are solid. The nose is complex, evolving with the room temperature. The flavor profile starts with sweet silky chocolate, vanilla, and, yes, marshmallows, only to hit you with oak and bourbon moments later. Creamy, smooth, silky. This is a wonderful beer. Get it if you can. Highly recommended.

"Hypnopompa is our imperial stout brewed with almost 100 kilos of marshmallows and Tahitian vanilla beans (the size of cigars). Low carbonation and boiled a bit extra for good measure, this is a beer strictly for the stout inclined. Drink now or age for many years. Bourbon barrel aged edition comes with a gold cap. Cognac (Grönstedts) barrel aged edition comes with a green sticker. Brewed at Brouwerij de Molen in Holland."
